Greetings from The Hamptons! I’m still on my summer vacay and have lots to catch you up on but wanted to pop in with a quick note. If you follow me on IG, you may have noticed two exciting pieces of news… 1. I’m expecting a baby girl! This has been quite the journey and I have lots more to say on the subject which I’ll be sharing here soon. 2. I finally went to Palm Heights with some of my favorite gals from Chan Luu! Can’t wait to give you the full recap. This week I wanted to share an easy and delicious supper we had the other night. These meals are so simple and perfect and to me, represent the best of summer.
First of all, The Hamptons have a lot to offer in the summertime. Gorgeous beaches, charming little villages, The Row (!), mom and pop ice cream shops, an abundance of lobster rolls and lots of places to play tennis. But my favorite thing to do here is to visit the farm stands. Before this area was transformed into the country's most luxurious summer destination, it was all farmland! The produce in The Hamptons is top notch and is presented so beautifully! The cherries look like jewels, the carrots have energy, the peaches are stunning and the best you'll ever have. Many of the farm stands also carry delicious snacks like curried chicken salad, local cheese and desserts. Check out Balsam Farms, Amber Waves and Sagaponack General Store if you're in the area! Each one has their own little scene, so pull over on the side of the road and sample the goods.
Our menu for an easy summer supper with nearly all ingredients from Balsam Farms:
Grilled corn and cherry tomato salad with basil and feta
Green salad with cucumber, avocado, herbs and a grainy mustard vinaigrette
Roasted salmon with capers, red onion and orange slices
Coconut rice with mint, dill, basil and parsley
A side of bread and butter pickles
Chocolate chip cookies
Served alongside Lorenza Rosé, Picpoul Blanc and our NA Sparkling for me!
